Mango pickle Oil free

Ingredients :

1 Kg green mango

100 Gm. Rock salt

50 Gm red chilli powder

40 Gm turmeric powder

50 Gm fenugreek seeds

50 Gm aniseeds

50 Gm split mustard seeds

10 Gm nigella seeds

1 Gm asafetida

80 ml vinegar

Method :

Slice mango into small dices, removing the pit, put some salt and turmeric powder. Keep it aside for 24 hours. The salt will draw water from mangoes, keep this water aside. Dry roast aniseeds & fenugreek seeds in a pan and grind them in a mixy. Mix aniseeds, fenugreek seeds, nigella seeds, chilli powder, split mustard seeds, asafetida, remaining turmeric powder and salt well. Heat vinegar and pour in mixture. Now mix mangoes, spice mixture and remaining water. Put the mango pickle in clean jar. You can keep the jar in sun light for 1 or 2 days. It will remain fresh throught the year.
